The apple tart with a bouquet of roses is the creation of the famous French chef Alain Passard.
Harder to make than an ordinary tart, but what a result ....... beautiful, original and delicious.
I made my usual recipe - only the decor is reminiscent of his creation by Alain Passard.
For the dough:
- 125 g flour,
- 75 g butter,
- 1 tablespoon sugar
- 1 tablespoon sour cream
- 1 or,
- 1 teaspoon baking powder,
- 1 pinch of salt,
- lemon peel
For apple compote:
- 3 apples
- 2 tablespoons sugar
- 20g butter
- 3-4 quality apples: Ariane, Granny, Golden
Preparation time: less than 60 minutes
RECIPE PREPARATION Apple tart bouquet of roses:
The dough ingredients should be at room temperature.
Put all the ingredients and make a dough. Leave to rest for an hour in the refrigerator.
Peel the apples and grate them
Cook the apples with butter, sugar and cinnamon for 5-8 minutes
Spread the dough and place in a greased pan. Put the apple compote on top. For decoration:
Wash the apples, remove the spine and cut them in half.
With a vegetable cleaner, cut thin strips containing the apple peel, as long as possible. We rotate the strips on themselves, giving them the shape of a rose.
We put it on the dough, with the crust on top. After we put all the roses, we sprinkled a little sugar on them.
Bake in the preheated oven at 180 ° C for about 30 minutes. Serve with powdered sugar or caramel sauce.
