Today we will make a simple, quick and easy salad to make. I'm sure the recipe is familiar to many of you because it's a potato salad with eggs and smoked fish. I'd love to know how you do it. But until then, I'll tell you how I like it.
As I am not a big fan of potatoes, this combination of potato-egg-fish is among the only ones that are to my taste and I eat it with gusto. Boiled eggs, although combined with the oil directly in the bowl, give the salad a creaminess and a better taste. And the added fish comes with an extra flavor and flavor.
This salad can also be prepared without an egg, as we showed you in the basic recipe for smoked fish potato salad, which you can read HERE and which is also suitable for days with fish release from fasting over the year.
Now I made it in another combination and in addition I added eggs. If you want to make this salad during fasting when there are fish releases, you just have to remove the eggs from the ingredients or make the version we talked about above.

The way to prepare the salad is simple and quick. Simply finely chop the three types of fish, as well as the red onion after cleaning. Mix the ingredients in a bowl and sprinkle with a little lemon juice.
Preparation of fasting mayonnaise. To prepare a creamy and stable eggless mayonnaise, proceed as in the case of classic mayonnaise by dripping oil over mustard and mixing vigorously for homogenization. Add lemon juice to taste, but also coarsely chopped hazelnuts.
Finally, the mustard mayonnaise is mixed with the above ingredients and the wonderful salad of three kinds of fish is assembled with a metal ring, as in the tartar recipes. The top is decorated with pomegranate seeds, for extra taste and color.
Boil the potatoes in salted water. When the fork enters them gently, they are ready. Drain the water and let the potatoes cool, then peel and cut into cubes.
The tail, spine and skin are removed from the fish (if the skin cannot be detached, there is no problem, it is left like this), then it is cut into small cubes.
Peel the onion and finely chop. Mix the fish, potatoes, onions, season with salt and pepper to taste.
Add mayonnaise (minus 2-3 tablespoons, which stop for decoration) and mix. Place the salad on a plate and garnish with the remaining mayonnaise. The way of presentation remains at the discretion and imagination of everyone.
Potato salad with smoked fish and apples
After the loaded meals for the holidays, it wouldn't hurt to switch to lighter dishes, with less fat, with more vegetables, with fish, chicken or turkey. And the salad I propose to you today fully meets these requirements, involving smoked fish (mackerel more precisely), potatoes, apples and lettuce, linked together by a sauce with sour cream, lemon and horseradish. Simple to prepare, but healthy and tasty. The salad can be prepared in advance, if you want to include it in a festive menu, with the mention that lettuce must be added before serving so as not to soften too much.
This time, I used a horseradish sauce with mayonnaise bought from the store, but I can't say that it impressed me (it contained only about 50% horseradish, and overall the taste was quite sweet). Therefore, I decided that next time I would either use some home-made horseradish sauce or try a combination with wasabi (Japanese horseradish). As for fish, you can use other smoked fish (such as herring or trout). You can also take fillets to get rid of the bones (only the fish will be less juicy).
Ingredients (for 8 servings):
& # 8211 1.1 kg potatoes (cleaned)
& # 8211 apples 5 pcs. (650 g unclean)

& # 8211 horseradish sauce with mayonnaise 2 tablespoons (80 g) !! adjust according to how fast you like it

Cut the potatoes into cubes of equal size and bring to a boil. Meanwhile, extract the meat from the fish, removing the skin and bones. Mix in a bowl the sour cream with the horseradish sauce, a pinch of salt and ground pepper. When the potatoes are cooked, drain them and let them cool a bit. Put them in a bowl, together with the pieces of smoked fish and olive oil. Stir gently, then allow to cool completely. Meanwhile, peel the apples, spine and seeds and cut them into cubes. As you cut them, sprinkle them with lemon juice so they don't oxidize. Pour the cream and horseradish sauce over the potatoes. Stir gently and add the apple cubes.
If it doesn't take more than 30 minutes to serve the salad, add the lettuce (washed, drained and broken into strips). Mix lightly, taste and season with salt and pepper. Until serving, keep the salad cold.

Cut the avocado into lengths, twist one half against the other, remove the seeds and scoop out the pulp with a spoon.
We put the avocado pulp in the bowl, pass it with a fork and sprinkle it with lemon to avoid oxidation, until we take care of the rest of the ingredients.
Julien cut onion, salad broken into small pieces (by hand, not cut with a knife because it will become bitter to taste), boiled egg cut into small pieces, feta cheese cut into cubes add them to the bowl over the avocado.
Smoked fish (for this recipe I used smoked mackerel) cleaned of skin and bones, we will cut it (or break it by hand) and add it to the bowl along with the corn kernels and olives.
dressing obtained (In a bowl mix the oil, mustard, lemon juice and pepper with a fork) we will pour it over the salad, stirring lightly with the help of 2 tablespoons or palettes to homogenize and combine the flavors.
Cover the bowl with smoked avocado fish salad with cling film and refrigerate it (if it will not be served immediately).
It can be served as a main course, as an appetizer on toast or wholemeal biscuits.

I don't know how you are, but most of all I like those dishes where I don't have to spend a lot of time in the kitchen. "Quick, tasty and healthy" is the motto I try to guide myself most of the time, and this recipe for mackerel salad is no exception.
Fish and seafood are the second source of animal protein that I eat most often after chicken.
